who we are

Deviant Craft Coffee & Donuts is a small-batch gourmet donut and craft coffee shop located in the Olde Mistick Village in Mystic, CT.

 We were established late fall 2017 as a pop-up shop in our sister shop Vault Coffee. 

We’re small but have our ear against the pulse of the latest trends and interests, making sure to take all suggestions we receive and implement them into future projects.

We make everything by hand - from each filling, to the glazes, all the way up to every garnish. Each idea is carefully crafted and tested to assure the best possible quality.

We love to bring local providers on board for collaborations including our friends Full Heart Farm (Ledyard), Beer’d Brewing Company (Stonington), Saltwater Farm Vineyard (Stonington), Thimble Island Brewery (Brantford) and Terra Firma Farm (Stonington). 

 
 
 
 

 We are also passionate about philanthropic opportunities that are near and dear to us, namely UConn’s HuskyTHON, Connecticut Alliance of Foster and Adoptive Families, Mystic Aquarium and the Breast Cancer Research Foundation. After two years of building our base and skills our little pop-up shop started bursting at the seams and we had to make the decision about where to go next. In early 2020 we made the call to merge with Vault Coffee under one brand: Deviant Craft Coffee & Donuts. With our new space we've been able to expand our menu, options and allow room for growth.

HOW IT STARTED?

Before Deviant was even a concept, our sister-shop Vault Coffee Roasters (established Fall, 2014) was looking to expand their offerings. Our ambitious pastry chefs stepped up to the plate and were faced with the question, “What goes best with coffee?”. We immediately thought of the classic coffee and donut scenario. But the real questions came when they examined how donuts were perceived at the time. 

We needed something inventive, trendy, and of course, fun for all ages. After spending months developing a brioche recipe we were happy with we began brainstorming flavors. We soon had a long list of ideas, and our passion for these flavors was strong enough to fuel a new venture, a pop-up shop under our own name. Deviant Donuts was established late Fall, 2017.

Brioche

Brioche makes up the majority of our donuts. They are used for filled and holed varieties and are known for their fluffy, rich taste and texture. We enrich our dough with lotta buttahh, milk, and eggs. We keep the dough neutral in flavor so it won’t compete with everything else we use on the final product.

Cake

We have two types of cake. Vanilla and Double Chocolate are what you will usually find unless specified in the menu. We make two special varieties as well as feature the #OG Chocolate Old Fashioned as a staple (mainly because it’s a BOH favorite).

GLUTEN SENSITIVE

“Gluten Sensitive” is our name for “Gluten Free” and means made without wheat ingredients. We use a brown and white rice blend with tapioca and sorghum flour.  Baked not fried.  Nut free unless otherwise specified. Contains milk and eggs.  We are not considered a gluten free facility, but we are very cautious about any possible cross contamination. We do have wheat flour in house, so please be advised.

Made with a flour and applesauce base and baked in our oven. Our vegan donuts are nut free unless otherwise specified and does not contain dairy, eggs.

CRÖ-DÖ

Our Crö-dö is a Croissant-Donut hybrid pastry.  Layers of flaky dough, donut shaped and glazed or filled with a variety of ingredients.

CRULLER

A fluffy egg pastry fried to perfection. This twisty treat is made from a pate choux dough that is fried until golden brown. The light egg taste is complimented by it's lightly sweetened honey glaze. Contains wheat and milk.
